Did you make too much rice last night? Don’t know what to do with it? Now you do. Fried rice is the perfect dish or side dish when you have a bunch of leftover rice. Its usually a bit stickier the next day and you can revitalize it with soy sauce, egg and veggies.
I happened to be at my parents house the night before I made this dish, the night after the initial rice cooking. Long story short, I had some leftover steak from their house, leftover rice and some veggies and I knew that it was time for fried rice. Like most things I make, you can swap one veggies for another, as there are no rules with fried rice or most dishes. I had some more asparagus, some shiitake mushrooms, napa cabbage and some shallots. Here is what I did:
Ingredients
Serves 1-2
4-6 asparagus, cut two or three times
1 large shallot diced
6-8 shiitake mushrooms (or another type), stem removed, sliced
~1/4 pound cooked steak, or another protein like chicken, tofu
4-6 leaves napa cabbage, cut into strips
1/2 small chili minced (optional)
1 clove garlic, minced
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon vegetable oil
1/2 cup cooked rice
1 egg
1 large shallot diced
6-8 shiitake mushrooms (or another type), stem removed, sliced
~1/4 pound cooked steak, or another protein like chicken, tofu
4-6 leaves napa cabbage, cut into strips
1/2 small chili minced (optional)
1 clove garlic, minced
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon vegetable oil
1/2 cup cooked rice
1 egg
Add garlic and oil to wok over low heat. Cook 1 minute. Add shallot and cook additional minute. Add asparagus, chili (if using), mushroom, napa cabbage, fish sauce. Increase heat to medium and cover to set steam and cook asparagus, about 5-7 minutes, until asparagus is soft, but not mushy.
Beat egg and then add soy sauce and mix until blended.
Add rice and steak to wok and top with egg and soy sauce mixture. Mix to allow egg to cook and coat the rice and vegetables. Cook additional 2-3 minutes then serve. Enjoy!!
