Just a couple weeks ago I posted a delicious and creamy mac and cheese recipe. In that post I mentioned that I would be making some meatloaf and showing it off on here. I took the basic recipe for a quick meatloaf sauce and added sriracha to spice it up. You could easily make this as a large loaf, but I opted for little mini-loaves.
I also decided to use dark meat ground turkey, but you could easily do a blend or whatever you prefer. I also tossed in mushrooms, which I had never done before, and that also turned out quite well.
Ingredients:
Serves 4
~1 pound of ground turkey, preferably dark meat
1/2 small yellow onion, fine dice
3 small crimini mushrooms, fine dice
1/8 teaspoon ground sage
1/4 teaspoon ground oregano
kosher salt
fresh ground black pepper
1 egg
1/2 cup bread crumbs
1/4 cup parmesan cheese
2/3 cup ketchup
3 tablespoon sriracha sauce (more or less depending how spicy you lie it)
1/4 cup brown sugar
3 tablespoons dijon mustard
Preheat oven to 350.
In a medium bowl add egg and beat well. Add onions, cheese, bread crumbs, sage, oregano, and a pinch of salt. Stir well. Add ground turkey and mix well. Add additional bread crumbs if it is not holding together.
Grease a sheet pan and form the turkey into 8 loaves.
In a small bowl, add ketchup, sriracha sauce, sugar and mustard. Mix well. Top each loaf with sauce. Bake, uncovered for 30-40 minutes, or until cooked through.
Serve with veggies and mashed potatoes.

Oh that would a great idea. I bet you could get 24 or so out a pound of meat.
Season ground turkey with salt and pepper and combine in a bowl with vegetable mixture, Sriracha, chia paste, sun-dried tomatoes, soy sauce and Worcestershire sauce. Mix with your hands, taking care not to over mix.
